Jam Tarts such a easy recipe to make. These cute little buttery biscuit base has a slightly tart jam filling which almost sets as it bakes. I enjoyed many many of these.

The pastry is a fool proof recipe and gives you the buttery and slightly crumbly crust..Since the jam is the star of this recipe, try to use good quality jam. I used blackcurrant preserve in this and i loved it. You can use strawberry, raspberry or any berry jam, even apricots preserves will be great too.

Ingredients:
All Purpose Flour / Maida - 2 cups / 240 grams
Sugar - 1/2 cup / 100 grams
Soft Unsalted Butter - 140 grams
Vanilla Essence - 2 tsp
Egg - 1
Baking Powder - 1/2 tsp
Salt - 1/4 tsp
Any Jam of your choice - 1 cup
Method:
Take butter, sugar and vanilla in a bowl and whisk well. Add in egg and whisk well.
Add in salt, baking powder and mix well.
Add in flour and mix well to form a dough. Now divide it into two portions and wrap it in plastic wrap and chill for 1 hour or so.
Now preheat oven to 200 degree C / 400 Degree F. Use nonstick muffin pan or grease lightly normal muffin pan with little oil.
Now take one portion and roll it out into little thin sheet. Use a cookie cutter to cut out rounds and line it in a small muffin pan.
Now use a fork to prick the bottom so it wont puff up.
Now spoon some jam in it and bake this for 12 to 14 mins.
Remove it and cool it for 5 mins in pan, remove it and cool it completely in wirerack.
Serve.
