Roasted Red Pepper Hummus

Preparation Time : 10 mins
Cooking Time : 35 to 45 mins for cooking chickpeas
Makes : around 2 cups
Ingredients:
Tahini Sauce - 4 tblspn ( Recipe here)
Garlic - 2 cloves
Lemon Juice - 2 to 3 tblspn
Water - 2 to 3 tblspn
Salt to taste
For Caramelized Onion:
Olive Oil - 1 tbsp
Onion - 1 large sliced thinly
Salt to taste
Sugar - 1/2 tsp
Balsamic Vinegar - 1 tsp
Method:
Cook chickpeas till it is soft. drain and set aside.
Heat oil in a pan, add onions along with salt and sugar and cook till onion is brown and caramelized. It will take around 15 minutes or so. Now add balsamic vinegar and mix well. Set aside.
Make hummus now, take chickpeas, garlic, tahini, salt, lemon juice and give a quick blend.Add water as needed and puree till smooth.

Now lets make the caramelized onion, slice onions thinly |
heat little oil in a pan, add onions |
sprinkle little sugar over them |
add salt |
mix well |
cook them on a low heat |
it will soften first and then start to caramelize |
now it is sweet and caramelized |
add some balsamic vinegar |
mix well |

take cooked chana in a mixer |
add garlic |
add tahini |
add lemon juice |
add salt |
blend till creamy |
add some water |
blend till smooth add in the onions |
pulse few times so it is mixed
serve
