Kulfi was in my to do list for a very long time, finally i made it for this summer. I made a mango kulfi this time and i have few more versions to try as well.

This is such a easy recipe to make, all you need is some milk. You dont need any cream in this. Try to use ripe sweet mangoes in this, because that what make this.

Preparation Time : 10 mins
Cooking Time : 25 mins
Freezing Time : Overnight
Makes: 8 to 10
Ingredients:
Milk - 500 ml
Sugar - 3/4 cup or as needed
Cornflour / Cornstarch - 2 tsp
Saffron a pinch
Ripe Mango Puree - 1.5 cup
Mango Essence or Cardamom Powder - 1/2 tsp
Method:
Take ripe mangoes, peel it, chop it, take it in a blender and puree till smooth. Take cornflour in a bowl, add little water or milk and mix well. Set aside.
Take sugar and milk in a sauce pan and bring it to a boil. Boil it and reduce it for 15 mins.
Now add in cornflour and mix well. Cook till it comes to a boil.
Now take it off the heat and add in saffron and leave till the milk cools down.
After the milk is cold, add mango puree and mango essence.Mix well.
Pour it into kulfi mould or any mould, freeze.
Once frozen, insert toothpick and serve
